Zubereitung

1. Den Backofen auf 180 Grad vorheizen. Die Herzformen einfetten. Für den Rührteig die Butter, den Zucker und den Honig in einer Schüssel mit dem Handrührgerät cremig rühren, das Vanillemark hinzufügen. Das Mehl mit der Stärke und dem Backpulver mischen. Die Mehlmischung portionsweise auf die Buttermasse sieben und abwechselnd mit den Eiern unterrühren. So lange weiterrühren, bis ein glatter Teig entstanden ist.

2. Den Teig in die Formen füllen und glatt streichen. Im vorgeheizten Ofen auf der mittleren Schiene etwa 30 Minuten backen. Herausnehmen und kurz ruhen lassen. Die Kuchen aus der Form lösen, vorsichtig auf das Kuchengitter stürzen und vollständig abkühlen lassen. Die Konfitüre erhitzen, durch ein Sieb streichen und die Kuchen damit bestreichen, falls nötig, die Oberfläche mit einem Messer gerade schneiden.

3. Für den Überzug das Marzipan in kleine Würfel schneiden und gut mit dem Puderzucker verkneten. Die Marzipanrohmasse in 6 gleich grosse Portionen teilen und jeweils dünn etwas grösser als die Kuchenherzen ausrollen. Die Kuchenherzen mit der Marzipandecke belegen und den Überzug mit einer Palette möglichst glatt andrücken, eventuell überstehende Ränder entfernen.

4. Für die Rosen das Marzipan in kleine Würfel schneiden und gut mit dem Puderzucker verkneten. Die Marzipanrohmasse mit einigen Tropfen Lebensmittelfarbe rosa färben und zu einer etwa 2 cm dicken rolle formen. Von der Rolle etwa 1 cm breite Stücke schneiden und zuerst die Blütenstempel formen. Aus den restlichen Marzipanstücken, wie in den Steps beschrieben, Blütenblätter formen und um den Blütenstempel legen. Nach und nach weitere Marzipanblätter anlegen und festdrücken. Die äusseren Blätter etwas nach aussen biegen. Die HerzKuchen mit den Marzipanrosen dekorieren und leicht mit Puderzucker bestäuben.
