Zutaten

Für den Hefeteig:

  • 500 g Mehl
  • 220 g Milch
  • 40 g Hefe
  • 80 g Zucker
  • 80 g Butter
  • 1 Ei
  • 1/2 TL Salz
     

Für den Rhabarber:

  • 3–4 große Stangen Rhabarber (je nach Geschmack variiert die Menge)
  • Zucker nach Geschmack (4–5 EL)
  • 200 ml Apfelsaft
     

Für den Rahmguss:

  • 500 g Schmand
  • 4 Eier
  • 1 Päckchen Vanillepuddingpulver
  • Zucker nach Geschmack (4 EL)

Zubereitung

Ich habe den Hefeteig mit dem Thermomix TM5 nach dem Thermomix-Grundrezept zubereitet. Selbstverständlich lässt sich der Rhabarber-Rahmkuchen auch ohne Thermomix nachbacken.
 

Hefeteig

Milch, Zucker und Hefe in den Mixtopf geben und 120 Sek, 37 Grad C, Stufe 2 erwärmen.
Mehl, Ei, Butter und Salz zugeben, mit der Teigstufe 2 Min. kneten. Teig in eine Schüssel umfüllen, abdecken und an einem warmen Ort gehen lassen, bis sich das Volumen verdoppelt hat (ca. 30 Minuten).
 

Rhabarber
(Menge nach Geschmack variieren)

3-4 große Stangen Rhabarber zuckern und mit wenig Apfelsaft dämpfen/garen. Abtropfen lassen.
Ofen auf 180 Grad C vorheizen.
 

Rahmguss

Schmand mit Eiern, 1 Päckchen Vanillepuddingpulver und Zucker nach Geschmack verrühren.
Backblech mit Backpapier auslegen.
