Zubereitung

Den Puderzucker in eine Schüssel sieben. Die Butter in Würfel schneiden, zum Puderzucker geben und verkneten. Eiweiß, Salz sowie Zitronenschale und Bittermandelöl in die Butter-Zucker-Mischung einarbeiten. Die Hälfte des Buttergemisches abnehmen und mit 225 g Mehl verarbeiten. Dabei mit den Händen das Mehl unterkneten, bis eine streuselartige Masse entsteht. Danach die verbliebene Buttermischung mit dem restlichen Mehl und dem Kakao zu einem zweiten Teig verkneten.
Die beiden Teige separat mit Frischhaltefolie umhüllen und über Nacht im Kühlschrank kalt stellen.

Am nächsten Tag die Teige einzeln 2 mm dick zu Rechtecken ausrollen und abwechselnd eine Schicht hellen und eine Schicht dunklen Teig übereinander legen. Dazwischen immer wieder ein paar Mandeln streuen. Nachdem eine Höhe von 4 cm erreicht ist, einmal vorsichtig mit dem Nudelholz darüberrollen. Auf diese Weise entsteht eine glatte Oberfläche. Danach in Folie eingewickelt 1 Stunde im Tiefkühlfach gefrieren.

Den gefrorenen Teig in 4,5 cm breite Streifen, dann in einzelnen Streifen in 1 cm dicke Scheiben schneiden und auf ein mit Backpapier ausgelegtes Blech legen.

Den Backofen auf 180°C vorheizen und die Tigerplätzchen 12 - 15 min. goldbraun backen. Aus dem Ofen nehmen und auskühlen lassen. In einer luftdicht verschlossenen Dose aufbewahren.
