Zutaten

Für die Crème:

  • 4 Eigelb
  • 3 EL Speisestärke
  • 120 g Zucker
  • 160 ml Milch
  • 240 g Sahne
  • 1 Vanilleschote
     

Für den Teig:

  • 160 g Mehl
  • 1 TL Backpulver
  • 1 Prise Salz
  • 60 g Butter
  • 160 g Zucker
  • 2 Pck. Vanillezucker
  • 120 ml Milch
  • 1 Ei
     

Zur Verzierung:

  • ca. 50 g brauner Zucker

Zubereitung

Crème:

  1. 4 Eigelb und ca. 2 EL Zucker mit einem Schneebesen verrühren. Speisestärke hinzugeben und die Zutaten verrühren, bis eine homogene Masse entstanden ist. Anschließend die Schüssel zur Seite stellen.
     
  2. Die Vanilleschote der Länge nach mit einem scharfen Messer halbieren und das Mark mit dem Messerrücken aus den Hälften herauskratzen. In einem Kochtopf Milch, Sahne, Zucker, Mark der Vanilleschote und die ausgekratzte Schote verrühren. Alles auf niedriger Stufe erhitzen und aufkochen lassen, dabei stetig umrühren. Anschließend die Vanilleschote aus der Milch-Sahne nehmen.
     
  3. 6 bis 8 EL der warmen Milch-Sahne zur Eigelb-Speisestärke-Masse hinzugeben und verrühren. Dann diese Masse vollständig mit der Milch-Sahne vermischen und kurz aufkochen lassen, bis eine cremige Konsistenz entstanden ist.
     
  4. Die Crème in eine Schüssel füllen, mit Frischhaltefolie abdecken und für 2 Stunden kühl stellen.
     

Teig:

  1. Den Backofen auf 180 °C Umluft vorheizen.
     
  2. Mit einem Rührgerät Ei, Zucker und Vanillezucker schaumig schlagen.
     
  3. Butter, Backpulver, Mehl, Salz und Milch hinzugeben und alles gut verrühren.
     
  4. Den Teig auf 12 Förmchen verteilen – ca. 2/3 der Förmchen sollten mit Teig gefüllt sein. Die Förmchen bei 180 °C ca. 20 bis 25 Minuten backen. Die Cupcakes anschließend auskühlen lassen.
     

Verzierung:

  1. Die ausgekühlten Cupcakes mit Hilfe eines Löffels mit der Crème bestreichen. Alternativ kann die Crème mit einem Spritzbeutel aufgetragen werden.
     
  2. Dann die Cupcakes mit braunem Zucker bestreuen und mit einem Flambierer den Zucker karamellisieren. Vorsichtig sein! Papierförmchen sind brennbar! Die Crème Brûlée Cupcakes schmecken am besten, wenn sie nach dem Flambieren sofort serviert werden.


Info: Crème Brûlée Cupcakes sind zum Mitnehmen nur bedingt geeignet, da ihre Kruste aus Zucker frisch hergestellt werden sollte.
