  1. Am Vortag die Zutaten für den Vorteig gut verrühren und bis zum nächsten Tag im Kühlschrank stehen lassen.
     
  2. Alle Zutaten mit der Küchenmaschine etwa 10 Minuten kneten, bis sich der Teig gut von der Schüssel löst. Anschließend abdecken und 2 Stunden an einem warmen Ort gehen lassen.
     
  3. Nach 1,5 Stunden den Backofen auf 250 °C Ober-/Unterhitze vorheizen. Die Kastenform gut einfetten oder mit Backpapier auslegen.
     
  4. Den Teig noch einmal mit der Maschine durchkneten und in die Kastenform geben. Das Brot auf der mittleren Schiene (bei 4 Möglichkeiten in die Zweite von unten) einschieben und 10 Minuten backen.
     
  5. Dann die Temperatur auf 180 °C Heißluft reduzieren. Nach 40 Minuten aus der Form nehmen, die Folie entfernen und noch einmal 10 Minuten ohne Form „auf dem Gesicht“ zu Ende backen.
     
  6. Das Brot ist fertig, sobald es sich hohl anhört, wenn man auf seinen Rücken klopft.


Tipp:
Den Aufwand für selbst gebackenes Brot kann man etwas entzerren, wenn man vom Vorteig gleich mehrere Portionen herstellt. Einfach die Menge vervielfachen und am nächsten Tag die Teilmengen einfrieren. Diese Vorteige musst du dann nur noch bei Bedarf auftauen, mit dem restlichen Mehl für das Brot vermischen, noch einmal gehen lassen und backen. Und wenn die Zeit zum direkten Backen auch nicht mehr reicht: Den Teig noch einmal in den Kühlschrank stellen und am nächsten Tag backen. Auch das ist ganz einfach möglich.
