Zubereitung

Brioche-Teig kann ganz unterschiedlich geformt werden: Als Brötchen, Osterhase oder auch Stutenkerl. Dieses Rezept zeigt, wie man Brioche-Teig zubereitet und anschließend zwei Schokobrötchen und zwei Häschen formt und backt.

1. Alle trockenen Zutaten (Mehl, Trockenhefe, Zucker, Vanillezucker, Puderzucker und eine Prise Salz) miteinander vermengen. Zum Vermengen Knethaken für das Rührgerät wählen.

2. Milch lauwarm erhitzen und zum Teig hinzugeben. Weiche Butter und Ei ebenfalls zufügen und alles 10 – 15 Minuten gut durchkneten. Der Teig ist fertig, wenn er schön klebrig ist.

3. Den Teig abdecken – am besten mit einem sauberen Geschirrtuch – und an einem warmen Ort (zum Beispiel über der Heizung) ca. 40 Minuten gehen lassen. Der Teig sollte in etwa doppelt so groß werden. Dann den Teig noch einmal bei mittlerer Stufe rund vier Minuten kneten.

4. Den fertigen Teig auf eine mit Mehl bestäubte Fläche legen und in vier gleich große Teile schneiden – für zwei Schokobrötchen und zwei Hasen.

5. Für die Schokobrötchen: Die gewünschte Menge an Schokotropfen in den Teig einarbeiten, zwei Brötchen formen und auf ein mit Backpapier ausgelegtes Backblech legen. Als Dekoration einige Schokotropfen auf die Brötchen drücken.

Tipp: Wenn der Teig zu sehr an den Fingern klebt, die Hände einfach ein wenig bemehlen.

6. Für die Häschen: Aus etwa 3/4 eines einzelnen Teig-Stücks eine ca. 25 cm lange Rolle formen. Die Rolle dann zu einer Schnecke eindrehen. Dabei den unteren Teil des Teiges etwas abstehen lassen – dieser bildet die Vorderpfote des Häschens. Aus dem restlichen Teig Schwanz und Kopf formen: Zunächst ein kleines Teig-Stück als Schwänzchen formen und an die Schnecke drücken. Anschließend eine Art Zapfen als Kopf formen und ebenfalls andrücken. Den Teig oben einschneiden, so dass die Ohren entstehen.

Tipp: Die einzelnen Teig-Stücke am besten auf dem Backblech zum Häschen zusammenfügen. Dabei Platz zwischen den Häschen lassen, da diese während des Backens aufgehen.

7. Den Teig nochmals 10 Minuten gehen lassen. Den Backofen auf 180 °C (Ober-/Unterhitze) vorheizen.

8. Dann den Teig mit Milch bestreichen, damit er beim Backen einen schönen Glanz erhält. Die Häschen nach Belieben mit Hagelzucker und Schokotropfen dekorieren. Alternativ können auch Nüsse oder Rosinen als Dekoration genutzt werden. Im Ofen ca. 35 – 40 Minuten backen, bis der Teig goldbraun ist.
