5 Eier / 75 g Zucker / 1 Pkch. Vanillinzucker / 50 g Mehl / 50 g Speisestärke / Backpapier / feinster Zucker zum Bestreuen des Geschirrtuchs / 2 Geschirrtücher / Prise Salz

Erdbeersahne
250 ml Sahne / 1 Schale super leckere Erdbeeren / Puderzucker nach Geschmack

Zubereitung

Sahne steif schlagen…. Erdbeeren mit einer Gabel zerdrücken u. unter die Sahne mischen. Kalt stellen.

Biskuit:
Eier trennen. Eiweiß mit Prise Salz sehr steif schlagen.
Unter ständigem rühren, Zucker u. Vanillinzucker einrieseln lassen.

Eigelbe mit dem Schneebesen unterziehen.
Mehl u. Speisestärke darüber sieben u. ebenfalls vorsichtig unterheben.

Teig gleichmäßig auf einem mit Backpapier ausgelegtem Blech streichen. Ca.12 Min. backen (Biskuit soll nicht braun werden) bei Umluft 160 Grad.

Inzwischen ein Geschirrtuch großzügig mit feinstem Zucker bestreuen. Fertige Biskuitplatte darauf stürzen u. das Backpapier sofort vorsichtig abziehen. Die Biskuitplatte mit einem ausgewrungenen (komplett naß machen) kalten Küchentuch abdecken u. ein paar Minuten auskühlen lassen.

Die scharfen Ränder abschneiden und den Biskuit mit der Erdbeersahne bestreichen und vorsichtig (mit Hilfe des Küchentuchs) aufrollen.

Ich finde, man sollte diesen Kuchen am gleichen Tag verzehren (was aber auch nicht besonders schwierig ist), denn am nächsten Tag schmeckt er uns nicht mehr soooooo lecker !!!!
Ich bereite ihn sogar erst kurz vor dem Verzehr zu, damit er gar nicht erst einen Kühlschrank von innen sieht.
