Zubereitung

Elektrobackofen auf 200 Grad vorheizen.

Für den Teig 250 ml Wasser, Salz, Butter und Zucker in einem Topf zum Kochen bringen. Von der Herdplatte nehmen, Mehl hinzugeben und kräftig rühren, bis ein glatter Teig entsteht. Topf zurück auf die Herdplatte stellen, rühren, bis sich die Teigmasse vom Topf zu einem Kloß löst und sich am Boden eine weiße Haut bildet. Teig in eine Rührschüssel geben, Eier nach und nach unterrühren, bis der Teig schwerreißend vom Löffel fällt. Brandteig erkalten lassen und Backpulver untermischen. Backblech mit Backpapier auslegen.

Mit einem Spritzbeutel walnussgroße Teighäufchen darauf setzen und im vorgeheizten Backofen ca. 25- 30 Minuten backen (Elektro- und Erdgasbackofen 200 Grad/Stufe 4, Umluft 180 Grad). Dabei darf der Backofen in den ersten 15-20 Minuten nicht geöffnet werden.

Von den Windbeuteln sofort einen Deckel abschneiden und ca. 20 Minuten abkühlen lassen.

Für die Füllung Vanilleschote längs halbieren und das Mark mit der Rückseite eines Messers herauskratzen. Sahne mit Vanillemark in eine Schüssel geben und steif schlagen, dabei Vanillezucker und Sahnesteif einrieseln lassen. Vanillecreme mit einem Spritzbeutel auf die Windbeutelböden spritzen, Deckel aufsetzen und mit Puderzucker bestäuben.

Nach Wunsch mit frischen Beeren garniert servieren.
