Zutaten

Für die Schokoladenhippen:

  • 60 g Zucker
  • 60 g Glukosesirup
  • 5 g Wasser
  • 25 g dunkle Schokolade
     

Für das Pralinè-Eis:

  • 1 l Sahne
  • 1 Vanilleschote
  • 10 Eigelb
  • 60 g Zucker
  • 200 g weiße Schokolade
  • 50 cl Kirschwasser o. Amaretto
     

Für das Chutney:

  • 2 EL Zucker
  • 100 ml Süßwein
  • 100 ml Orangensaft
  • einige Rosmarinnadeln und gleiche Menge Thymianzweig
  • ½ Sternanis
  • 2 Nelken
  • ½ Zimtstange
  • 1 Tütchen Safranfäden
  • Weisswein,
    Speisestärke und
    Obst nach Belieben

Zubereitung

Schokoladenhippen:

Zucker, Glukosesirup und Wasser genau abwiegen und in eine kleine Sauteuse geben.
Mit einem Plastiklöffel rühren und wenn die Farbe Gold ist, die gehackte Schokolade einrühren.
Die Masse auf eine Backmatte streichen zum erkalten.
Sobald die Masse hart ist, in Stücke brechen und im Standmixer zu feinem Pulver zerkleinern.
Das Pulver in einen Schablone, die am Besten auf einer Backmatte liegt, einstreuen.
Bei ca. 180 Grad ohne Gebläse 5 Minuten abbacken und sofort von der Backmatte nehmen und in die gewünschte Form legen, z. B. über eine Backrolle.
 

Pralinè-Eis:

Die Schokolade im Wasserbad schmelzen. Die Vanilleschote auskratzen und mit der Sahne mit Mark und Schote aufkochen lassen und durch ein Sieb geben.
Eigelb und Zucker schaumig schlagen und die Sahne unter rühren dazugeben. Bei kleiner Flamme unter ständigem rühren erhitzen und bis zur Rose abziehen.
Die Vanilleschote mit etwas Eismasse im Mixer pürieren und wieder unter die Eismasse rühren.
Jetzt die geschmolzene Schokolade und das Kirschwasser o. den Amaretto einrühren und im Kaltwasserbad abkühlen lassen.
In der Eismaschine cremig gefrieren lassen, ca. ½ Stunde.
 

Chutney:

Zucker in einem kleinen Topf karamellisieren.
Mit dem Orangensaft und Süßwein ablöschen.
Die Gewürze hinzugeben und auf die Hälfte reduzieren lassen.
Passieren, nochmals aufkochen und mit in Weisswein aufgelöste Speisestärke andicken.
Nun nach belieben die klein geschnittenen Früchte hinzugeben, z. B. Mango.
