Für den Teig:
3 Eier
125 g Zucker
125 g Instantmehl Type 405
1 Msp. Backpulver
Für die Füllung:
300 g Erdbeeren
1 EL Zitronensaft
50 g Zucker
6 Blatt Gelatine
400 g Sahne
2 Päckchen Sahnesteif

Zubereitung

Elektrobackofen auf 180 Grad vorheizen.

Für den Teig Eier trennen. Eigelbe und Zucker schaumig schlagen. Eiweiß steif schlagen und unter die Eigelb- Zuckermasse heben. Mehl und Backpulver mischen und vorsichtig unterheben.

Backblech mit Backpapier auslegen, den Teig darauf verteilen und glatt streichen. Biskuitboden im vorgeheizten Backofen ca. 10-12 Minuten backen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft 160 Grad).

Heiße Biskuitplatte vom Blech nehmen und auf ein sauberes, mit feinem Zucker bestreutes Geschirrtuch stürzen. Backpapier mit etwas kaltem Wasser bestreichen und vorsichtig abziehen. Die noch warme Biskuitplatte mit Hilfe des Tuches aufrollen und ca. 1 Stunde auskühlen lassen.

Für die Füllung Erdbeeren waschen und putzen. Sechs Erdbeeren vierteln und beiseite legen. Die restlichen Früchte mit Zitronensaft und 40 g Zucker grob pürieren. Gelatine in kaltem Wasser einweichen, ausdrücken und vorsichtig auflösen. Sahne mit dem restlichen Zucker steif schlagen, dabei das Sahnesteif einrieseln lassen.

Von der Sahne ca. 1/3 abnehmen und zum Garnieren in einen Spritzbeutel füllen.

Erdbeerpüree und Gelatine unter die restliche Sahne ziehen. Biskuitplatte ausrollen, mit der Erdbeercreme bestreichen und vorsichtig zusammenrollen.

Erdbeer-Zitronen-Biskuitrolle mit Sahnetupfen und Erdbeervierteln dekorieren und mindestens 2 Stunden kalt stellen. Nach Wunsch mit Zitronenmelisse dekorieren.
