Zutaten

Für den Biskuit:

  • 150 g Instantmehl Type 405
  • 1 TL Backpulver
  • 4 Eier
  • 90 g Zucker
  • 1 Päckchen Vanillezucker
  • 220 g Aprikosenkonfitüre
     

Für die Creme:

  • 6 Blatt weiße Gelatine
  • 2 Dosen Aprikosen à 425 ml
  • 500 g Mascarpone
  • 150 g Joghurt 3,5 % Fett
  • 10 EL Eierlikör
  • 75 g Zucker
     

Zur Dekoration:

  • 100 g Schlagsahne
  • 2 EL gehackte Pistazien

Zubereitung

Elektro-Backofen auf 200 Grad vorheizen.

Mehl und Backpulver vermischen.

Eier trennen, Eiweiß steif schlagen, 75 g Zucker sowie Vanillezucker einrieseln lassen. Eigelb und Mehl nacheinander unterheben.

Teig auf ein mit Backpapier ausgelegtes Backblech streichen und ca. 15-20 Minuten backen (Elektro- und Erdgasbackofen: 200 Grad/Stufe 4, Umluft: 180 Grad).

Konfitüre erhitzen.

Biskuit sofort noch heiß auf ein mit dem restlichen Zucker bestreutes Geschirrhandtuch stürzen und das Backpapier abziehen.

Den Boden sofort mit Konfitüre bestreichen, mit Hilfe des Tuches längs aufrollen und abkühlen lassen.

Biskuitrolle in ca. einen Zentimeter breite Scheiben schneiden, Boden und Rand einer Springform (26 cm Durchmesser) damit auslegen.

Für die Creme Gelatine nach Packungsanweisung einweichen, Aprikosen abtropfen lassen, 175 ml Saft abmessen, sechs Aprikosen in Spalten schneiden und den Rest würfeln. Mascarpone, Joghurt, Eierlikör, Zucker und Saft verrühren. Gelatine auflösen, unter die Masse rühren, Aprikosenwürfel unterheben und in die Form füllen.

Torte ca. vier Stunden kühl stellen.

Sahne steif schlagen, in einen Spritzbeutel füllen, Tupfen auf den Tortenrand setzen. Torte mit Aprikosenspalten, gehackten Pistazien und nach Wunsch mit Waffeleiern verzieren.
