25 g Butter
1 TL Orangenschale (getrocknet)
¾ EL Ingwer (gemahlen)
½ EL Nelken (gemahlen)
¼ EL Kardamom (gemahlen)

12 g frische Hefe
225 ml dunkles Bier (z. B. Porter oder Stout)
25 ml Rapsöl
50 ml Malzsirup/Malzextrakt

160 g Roggenmehl
245 g Weizenmehl
½ EL Salz
55 g Rosinen

Zubereitung

  1. Die Butter in einem Topf auf dem Herd bei kleiner Hitze schmelzen lassen und die Gewürze unterrühren. Alles abkühlen lassen.
  2. Circa eine Tasse Bier in eine Rührschüssel geben und die Hefe darin auflösen. Dann das restliche Bier, das Öl und den Malzsirup hinzugeben und alles vermischen.
  3. Die Butter mit Gewürzen, das Mehl, das Salz und die Rosinen hinzugeben. Alles gut kneten, bis ein glatter Teig entstanden ist.
  4. Den Teig für etwa 30 Minuten ziehen lassen. Dann wird der Teig „gefaltet“. Dazu die Hände befeuchten und den Teig auf einer bemehlten Arbeitsplatte platt drücken, bis er circa 1 bis 2 cm hoch ist. Nun das obere Ende des Teigs zur Hälfte einschlagen und andrücken. Genauso mit der unteren Hälfte und den Seiten vorgehen. Den Vorgang insgesamt drei Mal wiederholen. Das Falten soll dazu dienen, den Teig geschmeidiger zu machen. Dann den Teig für 60 Minuten ruhen lassen.
  5. Den Teig vorsichtig zu einem Brot formen. Nochmals für 90 Minuten ruhen lassen.
  6. Den Ofen auf 190 °C vorheizen. Sobald die Temperatur erreicht ist, erlischt am Backofen in der Regel ein Kontrolllämpchen. Das Brot auf ein Backblech legen und bei 190 °C für 15 Minuten in den Ofen geben. Dann die Temperatur auf 165 °C verringern, damit sich eine schöne Kruste bildet. Das Brot sollte bei 165 °C circa 35 Minuten backen.

 

Tipp: Während des Backens sollte das Brot eine Innentemperatur von circa. 96 °C erreichen. Die Temperatur lässt sich mit einem Thermometer zur Messung der Kerntemperatur messen.

Tipp: Vörtbröd schmeckt am besten frisch. Es kann mit Marmelade oder anderem süßen Aufstrich bestrichen oder herzhaft mit Schinken oder Käse belegt werden.
