Zubereitung

Für den Ölbisquit:

5 Eier mit 230 g Zucker gut 20 Min. lang schlagen. Nach und nach dann 1/8 l Milch und 1/8 l Öl untermixen. 250 g Mehl mit 1/2 Pck. Backpulver gemischt, kurz unterrühren auf kleiner Stufe (nur grad so lange bis das Mehl richtig untergemischt ist) oder von Hand unterheben. Ich habe noch 2 gehäufte EL Kakao untergemischt.

Bei 160 °C auf der mittleren Schiene ca. 40 Min. backen. Gut abkühlen lassen.
 

Für die Creme:

2 Blatt Gelantine in Wasser aufweichen lassen. 1/2 Pck. Spekulatius in einem Gefrierbeutel mit dem Nudelholz grob zerkleinern. Weich gewordene Gelantine in ein klein wenig heissem Wasser auflösen. Dann in die noch recht warme Gelantinenflüssigkeit ca.100 ml Sahne einrühren. NICHT die Gelantine in die Sahne reinschütten!!! 500 ml Sahne mit Sahnesteif steif schlagen. Dann die Gelantinesahne hinzugeben. Den zerbröselten Spekulatius unter die Gelantinesahne heben.

Den ausgekühlten Boden mit einem Tortenring versehen und mit bisschen Creme einstreichen. 1 kl. Dose Mandarine abtropfen lassen und auf der Creme verteilen, dann die restliche Creme darüber geben. Am besten über Nacht in den Kühlschrank stellen und dann den Tortenring entfernen.

Mit  Sahne einstreichen und nach belieben dekorieren.
