Für den Teig:

  • 200 g Weizenmehl Type 405
  • 1 Päckchen Vanillezucker
  • 40 g Zucker
  • 125 g Butter
  • 1 TL abgeriebene Schale einer unbehandelten Zitrone
  • 1 Eigelb
  • Mehl für die Arbeitsfläche
  • Fett für die Förmchen
     

Für die Füllung:

  • 3 EL Himbeermarmelade
  • 300 g Sahne
  • 1 Päckchen Sahnesteif
  • 250 g Magerquark
  • 4 EL Zucker
  • 1 Vanilleschote
  • 250 g Himbeeren
  • 3 EL gehackte Pistazien
  • 50 g Kuvertüre

Zubereitung

Alle Teigzutaten zu einem glatten Mürbeteig verkneten, in Frischhaltefolie wickeln und ca. 30 Minuten kaltstellen.

Elektrobackofen auf 200 Grad vorheizen.

Teig auf einer bemehlten Arbeitsfläche ausrollen und 10 Tortelett-Förmchen damit auslegen. Tarteletts im vorgeheizten Backofen (Elektro- und Erdgasbackofen: 200 Grad/Stufe 4, Umluft: 180 Grad) ca. 20 Minuten blind backen.

Ausgekühlte Torteletts aus der Form lösen und mit Marmelade bestreichen.

Für die Füllung Sahne mit Sahnesteif steif schlagen. Magerquark mit Zucker cremig verrühren, Vanilleschote der Länge nach aufschneiden und das Mark herauskratzen. Vanillemark und Sahne unter den Quark mischen und mit einem Spritzbeutel in die Torteletts füllen. Himbeeren darauf legen und mit Pistazien bestreuen. Kuvertüre schmelzen, die Torteletts fadenförmig damit überziehen und servieren.
