Teig:

  • 350 g Mehl
  • 375 g Zucker
  • 3 Päckchen Vanillinzucker
  • 3 TL Backpulver
  • ½ TL Salz
  • 125 g weiche Butter
  • 300 ml Milch
  • 50 ml Champagner
  • 3 Eier

Creme:

  • 250 g weiche Butter
  • 500 g Puderzucker
  • 125 ml Champagner
  • 1 EL Orangenblütenwasser
  • 6 TL Himbeerkonfitüre

Deko:

  • 30 g weiße Schokoraspel
  • einige gefriergetrocknete od. frische Himbeeren
  • 1 Bio-Zitrone

Zubereitung

  1. Für die Champagnertorte zunächst den Ofen auf 180 °C (Umluft 150 °C) vorheizen. Für die Tortenböden Mehl, Zucker, Vanillinzucker, Backpulver und Salz mischen. Die weiche Butter, Milch, Champagner und Eier hinzugeben und zu einem glatten Teig verarbeiten.
     
  2. Drei Springformen (Ø 20 cm) einfetten. Den Teig gleichmäßig auf die Formen verteilen und circa 25 bis 30 Minuten im Ofen backen. Nach dem Backen auskühlen lassen.
     
  3. Für die Champagnercreme die weiche Butter und den Puderzucker mischen und schaumig rühren. Dann den Champagner sowie das Orangenblütenwasser unterheben.
     
  4. Die drei Tortenböden mit der Himbeerkonfitüre und mit insgesamt circa zwei Dritteln der Champagnercreme bestreichen. Die Böden vorsichtig aufeinander stapeln. Dann mit dem Rest Creme die Böden auch seitlich bestreichen. Für 3 bis 4 Stunden kühlen.
     
  5. Die Schale der Bio-Zitrone mit einer Reibe oder einem Zestenreißer abreiben. Dann die Torte nach Belieben mit den weißen Schokoraspeln, den gefriergetrockneten oder frischen Himbeeren sowie der Zitronenschale garnieren.

Tipp: Orangenblütenwasser gibt es in arabischen sowie türkischen Lebensmittelgeschäften oder auch in der Apotheke zu kaufen.

Tipp: Wer mag, kann die Torte auch mit frischen Himbeeren, Himbeermousse und Sahnetupfen verzieren.
