Für den Teig:

  • 6 Eier
  • 250 g weiche Butter
  • 100 g Zucker
  • 1 Prise Salz
  • 100 g weiße Schokolade
  • 250 g Weizenmehl Type 405
  • 2 gestr. TL Backpulver
  • 50 g dunkle Schokoladenraspel
     

Für die Füllung:

  • 300 g Magerquark
  • 8 EL Puderzucker
  • 1 Dose Kokosmilch = 165 ml
  • 3 EL Zitronensaft
  • 1 TL abgeriebene Zitronenschale
  • 9 Blatt weiße Gelatine
  • 2 Becher Sahne à 250 ml
  • 100 g Kokosraspel
  • 100 g Ananas Konserve
     

Zum Verzieren:

  • 2 Becher Sahne à 250 ml
  • 2 EL Sahnesteif
  • 100 g Kokosraspel

Zubereitung

Eier trennen. Butter, Zucker, Salz und Eigelb schaumig schlagen.

Schokolade im heißen Wasserbad schmelzen und etwas abkühlen lassen.

Mehl und Backpulver vermischen, auf die Eicreme sieben, die geschmolzene Schokolade mit der Raspelschokolade gut unterrühren.

Eiweiß zu steifem Schnee schlagen und unterziehen. Den Teig in eine mit Backpapier ausgelegte Springform füllen.

Elektro-Backofen auf 180-200 Grad vorheizen, den Boden ca. 45–50 Minuten backen (Elektro- und Erdgasbackofen: 180–200 Grad/Stufe 4–5, Umluft 160–180 Grad), auskühlen lassen und zweimal waagerecht durchschneiden.

Quark, Puderzucker, Kokosmilch, Zitronensaft und -schale verrühren. Gelatine nach Packungsanweisung auflösen, unter die Creme rühren und kalt stellen, bis sie anfängt zu gelieren. Sahne steif schlagen und unterziehen.

Die Creme halbieren, unter die eine Hälfte Kokosraspel, Ananas fein würfeln und unter die übrige Creme ziehen.

Den unteren Boden auf eine Tortenplatte legen und einen Tortenring darum setzen. Ananascreme einfüllen, den zweiten Boden auflegen, Kokoscreme einfüllen, mit dem obersten Boden abdecken und die Torte ca. 2–3 Stunden kalt stellen, Torte der Länge nach halbieren und zu „Flügeln“ zusammensetzen.

Sahne mit Puderzucker und Sahnesteif steif schlagen, Tortenhälften damit bestreichen. Kokosraspel in einer Pfanne hellbraun rösten und die Tortenränder damit bestreuen.

Die Torte nach Wunsch mit silbernen Liebesperlen verzieren.
