Für den Biskuit:
3 Eier
60 g Zucker
1 EL Vanillezucker
2 EL kochendes Wasser
1 Prise Salz
90 g Weizenmehl Type 405
25 g geraspelte Schokolade
Für die Füllung:
1 Glas Blaubeeren = 540 g
300 ml Buttermilch
2 EL Vanillezucker
2 Becher Sahne à 250 g
2 Päckchen Sahnesteif
6 Blatt weiße Gelatine
Zum Verzieren:
125 g frische Blaubeeren
50 g Johannisbeergelee

Zubereitung

Elektro- und Erdgasbackofen auf 180 Grad vorheizen.

Eier trennen, Eigelb mit Zucker, Vanillezucker und Wasser ca. fünf Minuten lang schaumig rühren. Eiweiß mit Salz steif schlagen und mit einem Schneebesen vorsichtig unter die Eigelbmasse ziehen. Mehl mit der Schokolade unterheben.

Den Boden einer kleinen Springform (20 cm Durchmesser) mit Backpapier auslegen, Teig einfüllen und ca. 25-30 Minuten goldbraun backen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft: 160 Grad).

Abgekühlten Biskuit in drei Böden teilen, einen auf einen Kuchenteller legen und mit einem Tortenring so umschließen, dass am Rand noch etwas Platz ist.

Blaubeeren abtropfen lassen, pürieren und mit Buttermilch und Vanillezucker vermischen.

Einen Becher Sahne mit Sahnesteif schlagen.

Gelatine nach Packungsanweisung einweichen, auflösen und unter die Blaubeermasse rühren. Sobald die Masse anfängt zu gelieren, Sahne unterheben.

Ein Drittel der Creme auf den Boden geben, mit einem weiteren Boden abdecken, nochmals ein Drittel der Creme einfüllen, den letzten Boden auflegen, restliche Creme einfüllen und Torte ca. 2-3 Stunden kühl stellen.

Zum Servieren restliche Sahne mit Sahnesteif schlagen, oben auf der Torte verteilen, Blaubeeren waschen, trocken tupfen und auf der Sahne anrichten.

Johannisbeeregelee auflösen, etwas abkühlen lassen, über die Beeren träufeln und Torte nach Wunsch mit frischen Minzblättchen verziert servieren.
