Zutaten

  • 1 kg Quitten
  • 750 ml Wasser
  • 500 g Zucker
  • Walnüsse und Marzipan
  • alternativ 20 g Puderzucker und 20 g Kokosraspel

Zubereitung

Quitten waschen, Haut gut säubern, leicht abtrocknen und Frucht halbieren. Kerngehäuse und Stiel entfernen und die Frucht in kleine Würfel schneiden. Quittenwürfel zusammen mit dem Kerngehäuse (sorgt für einen intensiveren Geschmack) in einen Topf mit kaltem Wasser geben. Kurz aufkochen und anschließend etwa 45 Minuten köcheln lassen, bis die Quitten weich sind. Sieb mit einem Mulltuch auslegen und Quittenmus hineingeben.

Tipp: Bei diesem Schritt einfach den gewonnenen Quittensaft beiseite stellen und damit später Quittengelee einkochen!

Kerngehäuse entfernen und Mus pürieren. Zucker hinzugeben und die Masse unter ständigem Rühren bei mittlerer Temperatur etwa 60 Minuten lang einkochen, bis eine zähflüssige Masse entsteht. Backblech mit Backpapier auslegen und zähe Masse darauf glattstreichen.

Das Quittenbrot nun für mindestens 3 Stunden im Ofen oder alternativ 3-5 Tage an einem warmen Ort lagern und „austrocknen“.

Nach der Trocknungsphase (und Abkühlungsphase bei Trocknen im Ofen!) das Quittenbrot wenden, in rechteckige Stücke schneiden und dekorieren. Hierbei kann man entweder Marzipan und Walnüsse verwenden oder das Quittenbrot in einer Puderzucker-Kokosraspel-Masse wälzen.

Tipp: Zur Aufbewahrung von Quittenbrot eignet sich am besten eine gut verschließbare Dose. Zwischen die einzelnen gestapelten Brotstückchen sollte man Pergamentpapier legen. So bleibt das Brot innen schön saftig und außen bissfest.
