Für den Teig:

  • 500 g Weizenmehl Type 550
  • 2 Würfel frische Hefe (à 42 g)
  • 1/4 Liter Milch
  • 100 g Zucker
  • 125 g Butter oder Margarine
  • 1 Prise Salz
  • abgeriebene Schale einer unbehandelten Zitrone
  • 1 EL Rum
  • 150 g ganz Mandeln
  • 100 g Zitronat
  • 100 g Sultaninen
  • 100 g Korinthen
     

Zum Bestreichen:

  • 150 g Butter
     

Zum Bestäuben:

  • 150 g Puderzucker

Zubereitung

Mehl in eine Schüssel sieben und in die Mitte eine Vertiefung drücken, Hefe hineinbröckeln. Milch leicht erwärmen, die Hälfte der erwärmten Milch und ein Teelöffel Zucker zur Hefe in die Vertiefung geben und zu einem Vorteig verrühren, abgedeckt an einem warmen Ort ca. 15 Minuten gehen lassen.

Fett in der verblibenen Milch auflösen und mit restlichem Zucker, Salz, Zitronenschale und Rum nach und nach zum Vorteig geben und zu einem glatten Teig verkneten. Zum Schluss Mandeln, Zitronat, Sultaninen und Korinthen unterkneten. Teig abgedeckt nochmals ca. 30 Minuten an einem warmen Ort gehen lassen.

Elektro- und Erdgasbackofen auf 180 Grad vorheizen. Den Teig auf einer bemehlten Arbeitsfläche zu einem Oval ausrollen und dieses nicht ganz zur Hälfte zu einem Stollen übereinander schlagen. Damit dieser nicht breit läuft, einen Streifen aus gefalteter Alufolien herumlegen. Stollen ca. 60 Minuten backen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft 160 Grad).

Butter schmelzen und den warmen Stollen damit bestreichen.

Abgekühlten Stollen dick mit Puderzucker bestreuen.
