Für den Teig:
150 g Hartweizen-Grieß
150 g  Weizenmehl Type 550
2 TL Backpulver
150 g Magerquark
6 EL Speiseöl
1 Ei
1/2 TL Salz
Für den Belag:
50 g gewürfelter Speck
1 Zwiebel
150 g Creme fraiche
2 Eier
1 EL Milch
Pfeffer
500 g Brokkoli
geriebene Muskatnuss
50 g milder Gorgonzola
Mehl für die Arbeitsfläche
Fett für die Form
geröstete Mandelblättchen

Zubereitung

Für den Teig alle Zutaten mit 1/2 Teelöffel Salz glatt verrühren.

Für den Belag Speck in einer Pfanne knusprig braten. Zwiebel abziehen und fein würfeln. Creme fraiche mit Eiern und Milch verrühren und mit Salz, Pfeffer und Muskat abschmecken. Gorgonzola fein würfeln und mit Zwiebelwürfeln unterrühren. Brokkoli putzen, waschen, in Röschen teilen und in kochendem Salzwasser ca. 2 Minuten blanchieren. Elektrobackofen auf 200 Grad vorheizen. Teig in 6 Teile teilen, auf einer bemehlten Arbeitsfläche rund ausrollen und kleine gefettete Tarteformen (Durchmesser 12 cm) damit auslegen.

Brokkoliröschen und Speck hineingeben, mit Eiermasse begießen und ca. 20 Minuten backen (Elektro- und Erdgasbackofen 200 Grad/Stufe 4, Umluft 180 Grad).

Brokkoli-Quiche mit Mandelblättchen bestreut servieren.
