350 g mehlige Pellkartoffeln gegart
5 Schalotten
2 Knoblauchzehe zerdrückt
30 g Butter
200 g Blattspinat TK
130 g geriebener Käse
Salz
Pfeffer
Muskatnuss
Cayennepfeffer
1 Eigelb
150 g Hartweizen-Grieß
Grieß für die Arbeitsfläche
1 Ei zum Bestreichen

Zubereitung

Kartoffeln pellen und pressen. Schalotten würfeln und mit Knoblauch in 20 g Butter dünsten. Spinat auftauen, ausdrücken, dazugeben und ca. 3 Minuten mit dünsten.

50 g Käse untermischen, pikant mit Salz, Pfeffer, Muskat und Cayennepfeffer abschmecken und abkühlen lassen.

Kartoffeln mit Eigelb und Grieß zu einem glatten Teig verarbeiten und pikant würzen.

Auf die Arbeitsfläche ein sauberes Baumwolltuch legen, mit Grieß bestäuben und den Teig zu einem Rechteck (20 X 25 cm) von ca. 1/2 Zentimeter Dicke ausrollen. Mit Ei bestreichen, abgekühlte Spinatmasse darauf verteilen, mit Hilfe des Tuches aufrollen, in das Tuch wickeln und mit Küchengarn zubinden.

Kartoffel-Grieß-Rolle in kochendes Salzwasser geben und ca. 30 Minuten bei schwacher Hitze gar ziehen lassen.

Teigrolle herausnehmen, Tuch entfernen, in ca. 1 1/2 Zentimeter dicke Scheiben schneiden, in eine mit der restlichen Butter gefettete Auflaufform geben, mit dem restlichen Käse bestreuen und im vorgeheiztem Backofen bei 180° C (Gas Stufe 3) ca. 15 Minuten goldgelb überbacken.

Kartoffel-Grieß-Taler nach Wunsch mit einer Tomaten-Knoblauch-Sauce servieren.
