Für den Teig:
250 g Weizenmehl Type 405
1/4 TL Salz
125 g kalte Butter
Für die Füllung:
1 Frühlingszwiebel
2 feste Tomaten
100 g Fetakäse
Mehl für die Arbeitsfläche
Fett für die Form
3 Eier
160 ml Milch
60 g geriebener Käse
Salz
Pfeffer
1 TL gehacktes Basilikum
1/2 TL getrockneter Thymian

Zubereitung

Mehl, Salz, Butter mit drei bis vier Esslöffeln kaltem Wasser zu einem Mürbeteig verkneten und ca. eine Stunde kühl stellen.
Frühlingszwiebel putzen, waschen und in Ringe schneiden. Tomaten waschen, Stielansatz entfernen und in Würfel schneiden. Fetakäse zerbröckeln und mit Tomaten und Frühlingszwiebeln mischen.
Elektrobackofen auf 220 Grad vorheizen.
Mürbeteig auf einer bemehlten Arbeitsfläche ausrollen, zwölf Kreise von ca. elf Zentimetern Durchmesser ausstechen und die gefetteten Mulden einer Muffinform damit auslegen.
Tomaten-Feta-Mischung auf die Mulden verteilen.
Eier, Milch und Käse verquirlen, mit Salz, Pfeffer und Kräutern würzen, in die Vertiefungen füllen und ca. 20-30 Minuten auf der untersten Schiene des Backofens goldbraun backen (Elektro- und Erdgasbackofen: 220 Grad/Stufe 5, Umluft: 200 Grad).Pfeffer
