Für den Teig:
300 g Weizenmehl Type 1050
100 g kalte Butter
1 TL Salz
Für den Belag:
250 g Appenzeller
50 g Zwiebeln
1 EL Butter
2 Eier
150 g Sahne
1/2 TL gemahlener Anis
1/2 TL gemahlener Koriander
Salz, Pfeffer
Butter für die Form

Zubereitung

Für den Teig Mehl in eine Schüssel geben, Butter in Flöckchen zugeben, Salz und 100 ml kaltes Wasser zufügen und schnell zu einem glatten Teig verkneten. Teig ca. 30 Minuten kaltstellen.
Für den Belag Käse reiben, Zwiebel abziehen und würfeln. Butter erhitzen und Zwiebelwürfel dann goldgelb braten und abkühlen lassen. Eier mit Sahne verquirlen, geriebenen Käse, Zwiebeln, Anis und Koriander zufügen und Masse mit Salz und Pfeffer abschmecken.
Elektro-Backofen auf 200 Grad vorheizen. Sechs kleine Tarteformen (ca. Durchmesser 12 cm) einfetten.
Mürbeteig in sechs Teile aufteilen, zu sechs Kreisen ausrollen und Formen damit auslegen. Rand dabei etwas hochziehen und Teig mehrmals mit einer Gabel einstechen.
Käsemasse auf den Teig geben, gut verstreichen und ca. 20 Minuten backen (Elektro- und Erdgasbackofen: 200 Grad/Stufe 4, Umluft 180 Grad). 

Tipp: Die Käsetörtchen schmecken sowohl warm als auch kalt. Für ein geplantes Picknick die Törtchen auskühlen lassen und in einer Dose oder Pergamentpapier einpacken.
