Zubereitung

Für den Teig:

250 g Mehl
125 g Butter
1 m.-großes Ei(er)
80 g Zucker
1 TL Backpulver

Für den Belag:

4 EL Speisestärke
300 ml Wasser
50 g Butter
150 g Zucker
3 Eigelb
100 ml Zitronensaft
Für den Baiserbelag:
3 Eiweiß
150 g Puderzucker
1 Prise Salz

Zubereitung
Aus den ersten fünf Zutaten einen glatten Mürbeteig herstellen. Eine Springform (26 cm) einfetten und mit dem Teig auskleiden, dabei einen 2 cm hohen Rand ziehen. Den Boden im vorgeheizten Ofen bei 160° 20 Minuten vorbacken.

Inzwischen für die Füllung die Stärke mit etwas Wasser anrühren und zusammen mit dem restlichen Wasser und der Butter aufkochen lassen. Den Topf vom Herd nehmen und den Zucker, den Zitronensaft,die angerührte Stärke und die Eigelbe unterrühren. Den Pudding auf den vorgebackenen Boden gießen und glatt streichen. Den Kuchen wieder in den Ofen stellen, bis die Baisermasse zubereitet ist.

Die Eiweiße mit der Prise Salz steif schlagen und den Puderzucker langsam einrieseln lassen. Den Eischnee auf den Pudding streichen und nun bei 200° auf der obersten Schiene weitere 10 Minuten backen.

Den Kuchen aus der Form lösen und vollständig erkalten lassen.

Der Kuchen sollte am gleichen Tag gegessen werden, da die Baiserhaube sonst weich wird!

Für ein Blech nimmt man einfach die doppelte Menge der Zutaten :-)
