Für den Teig

  • 5 Eier
  • 250 g Zucker
  • 250 ml Speiseöl

  • 125 ml lauwarmes Wasser
  • 400 g Weizenmehl Type 405

  • 1 Päckchen Backpulver

  • 2 EL Backkakao

Für den Belag

  • 3 EL Zucker
  • 1 Mark einer Vanilleschote
  • 2 Päckchen Sahnesteif
  • 50 g geröstete Mandelsplitter
  • 500 g Magerquark
  • 4 Päckchen Vanillezucker
  • 500 g Sahne
  • 500 g Blaubeeren

Zubereitung

Eier trennen und Eiweiß steif schlagen. Eigelb mit Zucker weiß-cremig aufschlagen und Öl mit Wasser unterrühren. Mehl mit Backpulver mischen und mit Eischnee vorsichtig unterheben. Teig halbieren und eine Hälfte mit Kakao verrühren. Ein Backblech mit Backpapier auslegen und zunächst 2 Esslöffel hellen Teig in die Mitte des Bleches geben. 2 Esslöffel dunklen Teig direkt auf den hellen geben. Auf diese Weise hellen und dunklen Teig immer abwechselnd übereinander einfüllen, dabei nicht glatt streichen. Kuchen im vorgeheizten Backofen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft: 160 Grad) ca. 35-40 Minuten backen1, abkühlen lassen und in 20 Stücke schneiden. Magerquark, Zucker und Vanillezucker verrühren und mit Vanillemark verfeinern. Sahne mit Sahnesteif steif schlagen und untermischen. Creme locker auf den Teigstücken verteilen und mit Blaubeeren belegen. Mit Mandelsplittern bestreuen und servieren.
