Ihr benötigt eine Springform, Durchmesser 26 cm, gute eigefettet.
Backofen auf 180 Grad Celsius vorheizen.

Das Rezept funktioniert und schmeckt auch mit Weizen-Vollkornmehl :-)

Haselnüsse und Mandeln klein hacken und in der Pfanne leicht anrösten. Je nach Geschmack hackt Ihr mehr oder weniger oder könnt auch wahlweise gemahlene Nüsse verwenden.

Karotten reiben und zu den Nüssen geben.

Eier, Öl, Zucker und Orangenschale gut miteinander verrühren.

Dann alle weiteren Zutaten inklusive der Nuss-Karotten-Mischung dazugeben und 2 Minuten gut verrühren. Anschließend den teig in die vorbereitete Springform gehen und 50-60 Minuten Backen. Wenn der Kuchen nach 30 Minuten schon stark gebräunt ist, deckt ihn die restliche Backzeit mit Backpapier ab.

Wenn Ihr den Rührteig in Muffinformen backt, verkürzt sich die Backzeit auf ca. 30 Minuten.

Nach dem Auskühlen mit Puderzucker bestäuben (oder mit Zuckerguss und Marzipan-Karotten dekorieren).
