Zutaten für den Karottenkuchen

200 Gramm brauner Zucker

180 Gramm (ja, Gramm!) Sonnenblumenöl

3 EL Naturjoghurt

3 Eier (Größe M)

1 TL flüssiges Vanille-Exktrakt

250 Gramm Mehl Type 405

1 TL Backpulver

2 TL Zimt

1 Prise Salz

250 Gramm Karotten

150 Gramm Walnüsse

Für die Buttercreme:

200 Gramm Frischkäse

200 Gramm weiche Butter

400 Gramm Puderzucker

1 TL Vanillezucker

Und so wird der Karottenkuchen zubereitet

Schritt 1:

200 Gramm braunen Zucker mit einer Prise Salz, 180 Gramm Sonnenblumenöl, 3 Eiern, 1 TL Vanille-Extrakt, 2 TL Zimt und 3 EL Naturjoghurt in eine Schüssel geben und mit dem Mixer so lange vermengen, bis eine schöne homogene Masse entsteht. Anfangs sieht der Teig noch recht klumpig aus, aber das wird :-)

Schritt 2:

250 Mehl und 1 TL Backpulver durch ein Sieb geben und löffelweise, während dem Vermengen, dazugeben.

Schritt 3:

250 Gramm Karotten grob raspeln und 150 Gramm Walnüsse klein hacken und zum Teig geben.

Schritt 4:

Eine runde Springform oder eine Auflaufform mit Butter einfetten und mit Zucker ausstreuen. Das sorgt später dafür, dass der Rand schön karamellisiert wird. Den Teig des Karottenkuchen in die Form stellen und bei 180 Grad Ober-/ Unterhitze im vorgeheizten Backofen etwa 35 – 37 Minuten backen.

Schritt 5:

Nun wird die Buttercreme zubereitet. Dazu werden 200 Gramm Butter im Topf langsam geschmolzen. Die verflüssigte Butter kommt in eine Schüssel. Nun mit dem Schneebesen und unter ständigem Rühren löffelweise (!!) 400 Gramm Puderzucker dazugeben. Das ist wirklich wichtig, sonst verklumpt später alles. Nun die Masse in eine Rührschüssel geben und ebenfalls löffelweise und unterlangsamen Rühren 200 Gramm Frischkäse dazugeben, zum Schluss noch 1 TL Vanillezucker untermengen. Die Buttercreme kalt stellen.

Schritt 6:

Den Karottenkuchen auskühlen lassen und vorsichtig aus der Form lösen. Die Buttercreme darauf verteilen und den Kuchen nochmal etwa 30 Minuten kaltstellen.

Und schon ist der leckere Karottenkuchen nach englischem Originalrezept fertig!
