Für den Teig:
300 g Weizenmehl Type 405
100 g Zucker
1 Päckchen Vanillezucker
1 Prise Salz
2 Eier
200 g kalte Butter
Mehl für die Arbeitsfläche
Für die Füllung:
1 Dose Pfirsiche = 820 g
1 kg Magerquark
8 Eier
300 g Zucker
2 EL Weizenmehl Type 405
200 g Sahne
Fett für die Form

Zubereitung

Elektrobackofen auf 150 Grad vorheizen.

Für den Teig Mehl, Zucker, Vanillezucker, Salz und Eier in eine Schüssel geben. Butter in Stückchen schneiden, dazugeben und alle Zutaten zu Krümeln verkneten. Teig aus der Schüssel nehmen, zügig mit den Händen durchkneten und zu einer Kugel formen. Die Teigkugel in Klarsicht- oder Alufolie wickeln und ca. 30 Minuten im Kühlschrank ruhen lassen.

Für die Füllung Pfirsiche abtropfen lassen und in Spalten schneiden. Quark, Eier, Zucker und Mehl verrühren. Sahne steif schlagen und unterheben. Den Teig auf einer bemehlten Arbeitsfläche ausrollen. Springform (( 26 cm) einfetten, mit dem Teig auslegen und dabei einen Rand von ca. 5 cm hochziehen.

Teig mehrmals mit einer Gabel einstechen und mit Pfirsichspalten belegen. Quarkmasse auf den Pfirsichen verteilen und im vorgeheizten Backofen ca. 70-80 Minuten backen (Elektro- und Erdgasbackofen: 150 Grad/Stufe 1, Umluft 130 Grad).

Nach der Backzeit den Käsekuchen noch ca. 30 Minuten im leicht geöffneten Backofen stehen lassen, heraus nehmen, mit einem spitzen Messer vom Formrand lösen und komplett auskühlen lassen.

Den Kuchen nach Wunsch mit Puderzucker bestäuben.
