Zubereitung

» Bevor es richtig losgeht:

Zunächst einmal den Backofen bei Umluft auf 160° C vorheizen! Die Muffinformen eures beschichteten Muffinblechs legt ihr nun am besten mit festen oder beschichteten Papierförmchen aus. Dann müsst ihr hinterher nicht so viel saubermachen und die Muffins lassen sich viel besser herauslösen. Die Mandarinen für den Teig könnt ihr jetzt auch schon abtropfen lassen.

» Weiter geht´s mit dem Teig:

4 Eier, 150 g Zucker und ein Päckchen Vanillezucker in eine Rührschüssel geben und schaumig schlagen. Achtet darauf, dass die Masse locker und luftig ist, damit eure Muffins später auch schön „fluffig“ werden. Anschließend 500 g Magerquark, 200 g Joghurt und ein Päckchen Vanillepuddingpulver hinzugeben und für die fruchtige Note etwas von dem abgetropften Mandarinensaft hineingießen. Alles zu einer gleichmäßigen Teigmasse verrühren.

Zum Schluss gebt ihr die Mandarinen in den Teig. Wichtig dabei ist, dass sie wirklich kaum noch Saft enthalten (deshalb vorher abtropfen lassen), sonst wird der Teig zu flüssig! Die Mandarinen vorsichtig unterheben. Dabei nicht zu stark mit dem Teig verrühren, damit die kleinen Fruchtstückchen erhalten bleiben.

Den Teig jetzt in die Förmchen gießen. Die Mandarinenstückchen sind wahrscheinlich auf den Teigboden gesunken, das macht aber nichts. Ihr könnt sie einfach mit einem Löffel nach oben holen und gleichmäßig auf die einzelnen Portionen verteilen.

» Und ab in den Ofen:

Nun ist der Teig auch schon fertig und die Muffins können in den Ofen: bei 160° (Umluft) für 25-30 Minuten. Wenn sie goldbraun gebacken sind, ein wenig abkühlen lassen und - wenn ihr mögt - mit Puderzucker oder Zimt bestreuen. Fertig!
