Zubereitung

Der Backofen wird auf 180°C Ober- / Unterhitze vorgeheizt.

Das Mehl, die Butter, den Zucker, das Backpulver, das Ei und den Vanillezucker rührt ihr krümelig zusammen. Ihr habt jetzt zwei Möglichkeiten: entweder ihr wollt tatsächlich einen gedeckten Apfelkuchen machen, dann knetet ihr die Krümel weiter bis der Teig glatt ist ODER ihr probiert es mit Streuseln aus. Dann knetet ihr nur 2/3 des Teiges glatt und stellt das andere drittel als Streusel zur Seite. Solltet ihr eine Decke wünschen, gebt ihr das verbleibende Drittel noch etwas in den Kühlschrank.

Mit 2/3 des glatten Teigs legt ihr eine gefettete und bemehlte Springform aus und zieht einen Rand nach oben. Mit dem restlichen Teig bedeckt ihr den Boden. Um den Boden knuspriger zu bekommen gibt man die Backform nun schon für ca. 10 Minuten in den Backofen. Ein vorgebackener Boden verhindert, dass das Apfelmus zu sehr durchweicht. Das ist allerdings kein Muss. Der Apfelkuchen schmeckt auch ohne vorbacken herrlich.
Habt ihr die Backform ausgelegt, gebt ihr das Apfelmus mit dem Zimt in einen kleinen Topf und kocht es auf. Während es heiss wird, rührt ihr die Speisestärke mit dem Apfelsaft an. Sobald das Apfelmus anfängt zu kochen kippt ihr die angerührte Speisestärke hinein und lasst es ca. eine Minute köcheln. Das soll der Füllung auf dem Kuchen ein wenig mehr Stabilität geben.
Wer hier das stückige vermisst kann auch noch einen Apfel klein schneiden und mit hinein geben. Oder ihr gebt ein paar Rosinen mit hinein. Das ist auch sehr lecker.

Das Apfelmus wird nun auf dem Boden verteilt. Das restliche Drittel vom Teig rollt ihr nun in Kuchengröße rund aus. Legt es auf den Apfelkuchen und drückt es am Rand ein wenig fest. Wer möchte rädelt Streifen und bedeckt den Apfelkuchen mit einem Gitter.

Der Kuchen wandert nun für ca. 1 Stunde in den Backofen. Vergesst nicht zwischendrin immer wieder einen Kontrollblick zu werfen. Manche Öfen brauchen kürzer, andere länger.
