100 g rein pflanzliche Margerine
50 g Zucker
¼ TL Salz
2 EL Pflanzenmilch (z.B. Soja-/Reis-/Hafer-/Dinkel-/Mandelmilch)
Schale 1 BIO-Zitrone

Belag:
80 g gemahlene Mandeln
60 g Zucker
1 Pck. bzw. 10 g Vanillezucker
60 g rein pflanzliche Margarine
3 EL Pflanzenmilch (z.B. Soja-/Reis-/Hafer-/Dinkel-/Mandelmilch)
Evtl. einige Tropfen Bittermandelaroma
400 g Aprikosen

Zubereitung

1. Alle Zutaten für den Mürbeteigboden in die Rührschüssel geben und mit einer Küchenmaschine mit Flachrührer bzw. einem Handrührgerät mit Knetaufsatz auf niedriger bis mittlerer Stufe zu einem glatten Teig verkneten.

2. Den Teig in Frischhaltefolie einschlagen und im Kühlschrank 30 Minuten ruhen lassen. In der Zwischenzeit kann der Belag vorbereitet werden.

3. Aprikosen entkernen und sechsteln.

4. Für den Belag nun alle Zutaten für den Belag außer die Aprikosen in die Rührschüssel geben und mit der Küchenmaschine mit Flachrührer bzw. dem Handrührgerät mit Rühraufsatzen verrühren.

5. Ofen auf 175ºC Ober-/Unterhitze vorheizen.

6. Tarteform mit einem Backpinsel und Margarine einfetten.

7. Den Mürbeteig ca. 5 mm dick zu einem Kreis ausrollen (so einigermaßen rund nur).

8. Ich löse den Teig gerne dazwischen immer mal mit einer großen Palette von der Arbeitsplatte.

9. Mit der Tarteform könnt ihr kontrollieren, ob der Teig bereits groß genug für die Form ausgerollt ist.

10. Nun den ausgerollten Teig vorsichtig auf das Nudelholz bzw. dem Rollstab rollen (mit einem Rollstab ist es deutlich einfacher) und über der Form abrollen.

11. Nun den Mürbeteigboden vorsichtig vor allem am Rand andrücken und überstehenden Teig abschneiden. Wenn der Teig einreißt oder wie in meinem Fall eine ganze Ecke abreißt, könnt ihr den Boden einfach mit anderenTeigstückchen flicken.

12. Den Belag auf dem Boden verstreichen. Dafür nehme ich gerne eine kleine Palette, aber ein Buttermesser tut es auch.

13. Nun die Aprikosenstückchen gleichmäßig darauf verteilen. Teigreste vom Mürbeteigboden können mit den Fingern in kleine Stückchen gerissen und ebenfalls darauf verteilt werden.

14. Im Ofen ca. 40 bis 45 Minuten auf mittlerer Schiene backen.
