Zutaten
Für den Teig:
- 120 g weiche Butter
- 120 g Zucker
- 2 Eier
- 120 g Mehl
- ½ TL Backpulver
- 1 TL Zimt
- 2 Äpfel
- (nach Belieben) 1 cl Calvados
Für das Frosting:
- 200 g Doppelrahmfrischkäse
- 120 g weiche Butter
- 2 TL Zimt
- 250 g Puderzucker
Zum Verzieren:
- Apfelspalten, Mandeln, Rosinen o.ä.
Zubereitung
Los geht´s mit dem Teig:
Im ersten Schritt den Backofen auf 170° C (Ober-/Unterhitze) oder 150° C (Umluft) vorheizen. Das Muffinblech mit Papierförmchen auslegen, damit die Cupcakes sich nachher besser vom Blech lösen lassen. Nun der Butter den Zucker beimengen und cremig schlagen. Anschließend die Eier nacheinander unterrühren und ggf. den Calvados hinzugießen. Zimt mit Mehl und Backpulver mischen und unter die Butter-Ei-Masse mischen.
Im zweiten Schritt die Äpfel schälen, entkernen, klein würfeln oder – je nach Belieben – fein reiben. Die fertigen Apfelstückchen unter den Teig heben. Den Teig nun gleichmäßig in die 12 Muffinförmchen verteilen und in den Ofen schieben (Backzeit 25-30 Minuten).
Sind die Cupcakes fertig gebacken, müssen sie auf dem Kuchengitter gut auskühlen.
Nun folgt das Frosting:
Frischkäse und Butter cremig schlagen. Anschließend den Zimt unter den Puderzucker mischen und das Gemisch unter die Frischkäse-Masse rühren.
Tipp: Am besten dosiert ihr den Puderzucker vorsichtig in mehreren Schritten und gebt nach und nach immer mehr hinzu. So könnt ihr die Konsistenz des Frostings kontrollieren und ebenfalls schauen, ob die Masse euch süß genug/zu süß wird.
Das fertige Frosting mithilfe eines Spritzbeutels oder einer Kuchenspritze auf die Cupcakes verteilen. Profis arbeiten in der Regel mit einem Spritzbeutel, doch die Kuchenspritze lässt sich oft besser „händeln“ und das gleichmäßige Auftragen des Frostings geht leichter von der Hand.
Nun können die Apfel-Zimt-Cupcakes noch verziert werden. Fertig!
Tipp: Als Variationsmöglichkeit könnt ihr in die Mitte eines jeden Cupcakes ein weißes Schokostückchen einbacken. Das schmeckt nachher besonders gut, vor allem, wenn die Cupcakes noch ein bisschen warm sind!
