Zubereitung

Auch wenn dieses Vanillekipferl-Rezept ohne Eier auskommt, wird es ansonsten wie ein ganz normaler Mürbeteig zubereitet. Das heißt: Mehl auf die Arbeitsfläche schütten und in die Mitte eine Vertiefung drücken. In diese Vertiefung werden Zucker und eins der drei Päckchen Vanillezucker gegeben. Die anderen beiden Päckchen kommen erst später an die Reihe.
Die gemahlenen Haselnusskerne werden ebenfalls in die Vertiefung gegeben. Zum Schluss wird die Butter oder Margarine in kleinen Stückchen auf dem Rand verteilt.
Die Zutaten werden miteinander vermengt und schließlich mit den Händen durchgeknetet, bis ein glatter Teig entsteht. Dabei ist eine schnelle Verarbeitung wichtig, damit der Teig nicht zu warm wird.

Nun wandert der Teig für mindestens eine halbe Stunde in den Kühlschrank, bevor er weiter verarbeitet werden kann.
Stück für Stück wird der Teig zu Rollen geformt, von dem man kleine Scheiben abschneidet. Diese Scheiben rollt man zwischen den Fingern, bis sich kleine Teigwürste von etwa fünf bis sechs Zentimeter Länge bilden. Die Würste werden zu kleinen Halbmonden geformt und auf ein mit Backpapier ausgelegtes Backblech gelegt.
In der Zwischenzeit heizt man den Backofen auf 200°C vor. Die Backzeit beträgt etwa 12-15 Minuten.
Nach dem Backen werden die noch heißen Vanillekipferl sofort mit einer Mischung aus Puderzucker und Vanillezucker bestäubt, denn dann verbindet sich der Zucker besonders gut mit dem Gebäck. Normalerweise sollte die Teigmenge zwei Bleche ergeben; pro Blech verwendet man dann eins der beiden restlichen Päckchen Vanillezucker.
