Zubereitung

Die weiche Magarine in eine Schüssel geben, 100g Zucker und das halbe Päckchen Vanillinzucker hinzufügen und mit dem Handrührgerät auf höhster Stufe schaumig rühren.
Eier nach und nach solang unterrühren bis sie sich mit der Magarine verbunden haben.
Mehl in eine Schüssel geben und mit dem Backpulver vermischen.
Die Zitrone waschen, trocknen und die Schale mit einer feinen Reibe abbreiben. Danach die Zitronenschale unter das Mehl mischen.
Den Zitronensaft mit der Zitruspresse ausdrücken.
Nun das Mehl im Wechsel mit dem Zitronensaft auf niedrigster Stufe unter die Magarine rühren.
Dann den Teig in die Förmchen geben das diese aber nur so halb befüllt sind.

Im vorgeheizten Backofen, auf die mittlere Schiene schieben bei 200°C ca. eine viertel Stunde backen lassen.
Die Muffins danach hinausnehmen und abkühlen lassen.

Nun kann man diese noch gestalten, wir machen dies mit Zuckerguss und bunten Streuseln, genauso geht es auch mit Kofertüre und es schmeckt super lecker.
Meine Tochter liebt Nüsse, die kommen auch oft in den Teig schon mit hinein da hat man dann einen Nussmuffin.
