Zubereitung

So gelingen die Macarons:
Backofen auf 100 °C Umluft vorheizen.
Gemahlene Mandeln und Puderzucker sieben. Eiweiß, herkömmlichen Zucker und eine Prise Salz in eine Schüssel geben und mit den Schneebesen des Rührgeräts schlagen, bis sich der Zucker aufgelöst hat. Dann den gesiebten Puderzucker hinzugeben und den Eischnee steif schlagen. Anschließend die gesiebten, gemahlenen Mandeln vorsichtig unterheben. Bei Bedarf einige Tropfen Lebensmittelfarbe hinzugeben und vorsichtig unterheben.
Die fertige Masse in einen Spritzbeutel geben. Wenn kein Spritzbeutel vorhanden ist, kann ebenso ein Gefrierbeutel, bei dem eine Ecke abgeschnitten wird, verwendet werden.
Ein Backblech mit Backpapier auslegen und 3 bis 5 cm große Kreise auf das Backpackpapier spritzen. Dabei sollte genug Platz zwischen den einzelnen Macarons-Hälften gelassen werden, da diese während des Backens noch ein wenig verlaufen. Dann die Macarons-Hälften für circa 40 Minuten im Backofen backen. Sie sind fertig, wenn die Oberseite knusprig und die Unterseite noch klebrig ist. Anschließend die Macarons abkühlen lassen.

Die Ganache zubereiten:
Für die Ganache (Creme) die weiße Schokolade zusammen mit der Sahne im Wasserbad bei schwacher Hitze verschmelzen. Vanillemark hinzugeben. Sobald eine homogene Masse entstanden ist, die Ganache vom Herd nehmen und etwas abkühlen lassen. Bei Bedarf einige Tropfen Lebensmittelfarbe hinzugeben und die Creme mit dem Rührgerät cremig aufschlagen. Dann die fertige Creme in einen Spritzbeutel füllen.

Ganache und Macarons-Hälften zusammensetzen:
Die abgekühlten Macarons-Hälften vom Backpapier lösen und umdrehen. Anschließend die Ganache auf den flachen Seiten der Hälfte der Macarons verteilen. Dann die Hälften mit Ganache mit denen ohne Creme zusammensetzen. Fertig!
