Zutaten

Für den Teig:

  • 60 g Butter
  • 60 g Schokolade, weiße 50 g Schokolade
  • 2 Ei(er), getrennt
  • 50 g Puderzucker
  • 50 g Mehl
  • 1/2 TL Backpulver
  • 1 Prise Salz
  • 1 Pck. Puddingpulver, Vanille
     

Für das Topping:

  • 200 g Doppelrahmfrischkäse
  • 100 g Frischkäse (light 0,2%)
  • 100 g Magerquark
  • 150 g Himbeeren, (TK)
  • 80 g Puderzucker
  • 1 Pck. Sahnesteif

Zubereitung

Teig:

Die weiße Schokolade zusammen mit der Butter in einem Topf vorsichtig und unter rühren schmelzen lassen.
Leicht abkühlen lassen.

Eier trennen und das Eiweiß mit einer Prise Salz leicht steif schlagen und zur Seite stellen.
Eier mit Puderzucker schaumig schlagen und vorsichtig die Butter-Schokoladenmasse hinzu geben.
Nun das mit Backpulver und Puddingpulver vermischte Mehl vorsichtig so lange unterrühren, bis es sich gleichmäßig verteilt hat.
Nun als letztes das steif geschlagene Eiweiß unterheben und die Masse in die eingefetteten Förmchen geben. 

Nun die Schokolade klein schneiden oder ein Stück auf die Teigmasse geben, leicht andrücken.

Im vorgeheizten Backofen bei 175° C Umluft ca. 15 Minuten backen.

Danach die Muffins abkühlen lassen und später das Frosting auftragen.
 

Frosting:

Für das Frosting die noch minimal angefrorenen Himbeeren pürieren und den Puderzucker unterrühren.
Frischkäse und Quark schön vermixen, dann das Himbeerpüree unterrühren. Anschließend noch Sahnesteif zugeben und noch 2–3 Minuten weiter aufschlagen.
Je nach Belieben verzieren :)
 

Popcakes:

Wenn noch Teig von den Cupcakes übrig ist, diesen einfach für Popcakes verwenden.
Dafür einfach den restlichen gebackenen Teig mit etwas Frischkäse vermischen und zu kleinen Kügelchen formen.
Diese dann ab ins Eisfach für ca 30 Minuten. Danach werden die Bällchen mit je einem Holzstäbchen eingestochen und in z. B. geschmolzene Schokolade oder Zuckerguss getaucht.
Hierbei aufpassen, dass die Bällchen nicht vom Holzstäbchen abfallen! Die Popcakes trocknen lassen und danach verzieren :)
