Zubereitung

Eine Kastenform 30 x 11cm

1. Den Backofen auf 160°C Umluft vorheizen. Die weiche Butter (Zimmertemperatur) mit den Rührbesen des Handrührgerätes mehrere Minuten schaumig schlagen, dabei nach und nach Salz und Zucker unterrühren bis diese sich gelöst haben.
2. Die Eier einzeln zugeben und jeweils ca. ½ Minute sorgfältig verrühren. Die Masse anschließend so lange schlagen, bis sie hellcremig ist.
3. Das Mehl mit dem Backpulver und der Speisestärke mischen und portionsweise unterrühren.
4. Die Milch nach und nach hinzufügen und so lange rühren, bis der Teig schwerreißend von den Rührbesen fällt. Sollte der Teig zu flüssig sein, noch einmal 2-3 Esslöffel Mehl unter die Masse rühren.
5. Den Teig in eine gut gefettete Kastenform füllen und glattstreichen. Mit einem spitzen Messer den Teig längs etwa 1cm tief einschneiden und ca. 50 Minuten backen.
6. Etwas auskühlen lassen und aus der Form stürzen. Vor dem Servieren mit Puderzucker bestreuen oder mit Kuvertüre bestreichen.
Tipp
Wenn du den Rührkuchen am Vortag backst und mit Kuvertüre überziehst, ist er am nächsten Tag noch viel saftiger.
Mandelstifte und bunter Zuckerstreusel  auf die flüssige Kuvertüre streuen ... dann isst auch noch das Auge mit!
