Zubereitung

  • Mehl sieben
  • Aus 500 g Mehl eine Mulde machen, Wasser und Salz zugeben
  • Zu einem glatten, glänzenden Teig kneten
  • Teig ca. 15 Minuten ruhen lassen
  • Butter in Würfel schneiden und mit 100 g Mehl verkneten
  • In eine rechteckige Form bringen und 30 Minuten im Kühlschrank ruhen lassen
  • Den Teig auf einer bemehlten Arbeitsfläche zu einem 60 x 30 cm Rechteck ausrollen
  • Den Butterziegel zwischen Backpapier auf 20 x 25 cm ausrollen
  • Die Butter auf der linken Seite des Teiges legen und den Rand um die Butter dünn mit Wasser bestreichen
  • Die rechte Seite des Teiges über den Butterblock klappen
  • Den Teig jetzt ohne Druck wieder auf die Größe von 60 x 30 cm ausrollen
  • Wichtig: Die Butter darf nicht aus dem Teig kommen!
  • 20 cm des Teiges zur Mitte klappen und die 20 cm der andere Hälfte drüber
  • Teig in Frischhaltefolie einpacken und 30 Minuten im Kühlschrank ruhen lassen
  • Anschließend den Teig wieder auf 60 x 30 cm ausrollen
  • 15 cm des Teiges in die Mitte schlagen von der linken und der rechten Seite
  • Beide Teighälften nochmal in die Mitte klappen
  • Teig wieder in Folie und 30 Minuten ruhen lassen
  • Dann Teig auf 60 x 30 cm ausrollen
  • Erneut 20 cm des Teiges zur Mitte und die 20 cm der anderen Hälfte darüber klappen
  • Den Teig in Folie nochmals 30 Minuten ruhen lassen
  • Teig auf 1,5 cm dick ausrollen und mit dem Cronut Ausstecher Teigringe ausstechen
  • Öl auf ca. 180 °C erhitzen. Wenn sich an einem Holzlöffel Blasen bilden, hat das Öl die richtige Temperatur erreicht.
  • Teigringe vorsichtig ins Öl geben und auf jeder Seite für 2–3 Minuten goldbraun backen
  • Mit dem Schaumlöffel aus dem Öl nehmen und auf einem Küchenpapier auskühlen lassen
  • Ausgekühlte Ringe einmal waagrecht durchschneiden
  • Mit Marshmallow Paste füllen
  • Beeren drauf legen
  • Deckel drauf setzten und leicht andrücken
  • Mit Puderzucker abstauben
     

Tipp: Bei den Cronuts darf man auch mal fertige Füllungen aus der USA verwenden, wie Marshmallow, Erdnussbutter oder Toffeecreme.
